Ingredients
  • 1 zucchini
  • 1 eggplant
  • 3 kumato tomatoes
  • 6-8 cherry tomatoes
  • 2 red tomatoes
  • 2 red chili peppers
  • 2 sweet red peppers (baked)
  • 1 red onion
  • 100 g goat cheese
  • 1/2 parsley
  • 4 tbsp olive oil extra virgin
  • 2 tbsp apple vinegar (white)
  • salt and freshly grounded black pepper (to taste)
Instructions
  1. Cut the zucchini and eggplant into circles. Season with olive oil and grill them on a cast iron grill pan. Bake the chili as well.

  2. Cut the tomatoes into halves and quarters, then the onion into circles and the roasted peppers into cubes.

  3. Arrange the products and sprinkle with grated goat cheese and parsley. Season to taste.
